OCTOBER 2006 Recipes
Orange Slice Cookies
ingredients:
2 cups shortening
1 cup white sugar
2 cups light brown sugar
3 eggs
1 1/2 tsp soda in 3 Tablespoons water
3 cups oatmeal
20 orange slices, cut small
1 small can Angel Flake Coconut
3 cups flour
1 1/2 cups pecans
1 1/2 tsps. Baking powder
Directions:
Cream sugar and shortening in large mixing bowl (and it needs to be large!). Add eggs, soda, orange slices nuts, and coconut. Add flour sifted with baking powder. Add oatmeal. Chill several hours after rolling in waxed paper-usually makes 3-4 cookie logs. Slice and bake at 325 for 10-15 minutes. Note: dough can be frozen, rather than chilled. Just slice what you want while dough is frozen and bake. Makes about 8-10 dozen cookies.
